Verjus is juice from grapes harvested prior to full ripening to produce a bright & mildly acidic complement to food & drink recipes.  It is a great alternative twist on citrus juice or vinegar.

This verjus is made with vinifera grapes harvested and crushed in mid-summer when acid levels are high and sugar levels are low.
